When we set out to make our first sparkling wine, we weren’t looking to copy Champagne or Prosecco or any other French example. Copying is not our style; we wanted a stylish, but easy to drink fizz so, unusually we blended appley Colombard grapes with Chardonnay. To get the finest bubbles, we used the same method as Champagne, but we took care not to have the toastiness or acid bite that is the mark of many wines from that region.
TASTING NOTES
Green, yellow colour, with greenish background, elegant bubbles. Fairly intense aromas of yellow fruit and with great complexity, with soft hints of good ageing and lees. Dry & fresh in the mouth, due to its appropriate acidity and pleasant carbonic content, balanced and juicy.
FOOD STYLE
To be drunk by itself, or with a wide range of dishes.

This fresh and modern sparkling wine is created by secondary fermentation in the bottle, spending 6 months resting on lees prior to release. This process gives the wine fine bubbles and a creamy texture. The 100% Grenache wine expresses intense aromas of red berries and rich fruit flavors, while delicate bubbles create a truly indulgent experience.
TASTING NOTES
Complex wine with the expression of red fruits marked but all in delicacy. Golden apple, navel orange, heirloom tomato, strawberry tops, and pickled watermelon. Flavor of ground nuts, strawberry jelly, and graphite.
FOOD STYLE
Ideal as an aperitif, spicy tapas, a beef tartare and red berry desserts.
